
Calcium gluconate and calcium lactate. Mixture of two salts that allow us to incorporate calcium into a medium without adding flavor. Helps to provide enough calcium to a liquid so that it reacts with the Alginate and can be spherified.

Application: Mixes for reverse spherification poor in calcium.
